Prof. Lasanthi Jayathunge earned her doctoral degree from Queen’s University, Belfast, UK, in 2016, specialising in emerging food processing technologies. She currently serves as a Professor in Food Processing Technology at the Department of Biosystems Technology, Faculty of Technology, University of Sri Jayewardenepura, Sri Lanka. She served as a resource person in academic and industrial workshops related to post-harvest and food processing technologies.
